Key Lime Kefir Pie
I have the good fortune of having a key lime tree in my yard, and boy do I love these little guys. Mixing kefir with citrus fruits is a win-win! You get tons of benefits from the kefir and the key limes are a good source of magnesium and potassium, which promote heart health. Potassium can naturally lower blood pressure and improve blood circulation which reduces your risk of a heart attack and stroke.
Key Lime Pie Filling
- 2 packages cream cheese room temperature
- ¾ cups Kefir
- ½ cup Cottage cheese (or ricotta cheese)
- 1-2 teaspoon key lime zest
- ⅓ cup key lime juice
- ½ cup Honey
- 1 teaspoon Matcha Tea Powder (for green coloring)
Graham Cracker Crust
Using a food processor, process your graham crackers until you have fine crumbs.
Mix in your melted butter and coconut sugar using a fork until combined.
Press into an 8-9 inch pie plate.
Chill for at least 1 hour
Key Lime Pie Filling
Using a food processor, combine all ingredients for the pie filling, pulsing until smooth.
Pour into your chilled pie crust.
Chill in the refrigerator for at least 3 hours and then serve!
Taste and add more sweetener if desired.
