SCOBY Date Balls
Ingredients
- 1/4 cup coconut oil
- 1/4-1/2 cup Scoby Puree – depending on how sour you want them
- 7 pitted dates – vary the amount, depending on the sweetness you want
- 1 teaspoon vanilla – or vanilla bean paste!
- 1/2 cup almonds
- 1/2 teaspoon Celtic Sea Salt
- 10 whole almonds – (To top your date balls)

Instructions
- Using a food processor, blend your SCOBY puree and coconut oil.
- Add in your dates, vanilla, salt, almonds and blend again. You may need to stop and scrape the bowl a few times to get it fully blended.
- Once you obtain the consistency you desire (smooth or chunky), scoop with a small cookie scoop or a spoon onto a plate and add one whole almond to the top (for prettiness!)
- Allow to cool in the fridge to harden for at least an hour and enjoy! You can store in the fridge for 1-2 weeks or in the freezer for several weeks.
