Einkorn Pasta

I am crazy for einkorn pasta. You can make this pasta using the traditional way of making flour into a circle and adding a well to the center to put the eggs in. However, I found a food processor works just as well and is super fast. You can also use a pasta maker. I showed you how to roll it out and cut it into strips by hand in this recipe, with pictures. Instructions

  • In a food processor, place the flour, eggs. Run the machine until the dough comes together. If it seems a little dry, that is fine it takes a while for Einkorn flour to absorb all the water.
  • Remove the dough and place on a lightly floured work surface. If the dough is a bit sticky, add a sprinkle of flour. Knead by hand for 1-2 minutes (the food processor does most of the kneading for you). Form the dough into a ball, cover tightly with plastic wrap, or slip a bowl over it. Let it rest at room temperature for 30 minutes.
  • Cut the dough into 4 equal pieces; flatten one into a thin 6-8-inch oval disc (re-wrap the remaining pieces so they don’t dry out).
  • Lightly flour your cutting board and both sides of the pasta. Roll the first piece into a 12×8 section.
  • Fold the short side over once, making sure that your surface stays flour to prevent sticking.
  • Fold it over again.
  • Fold it once more till you have a single stack.
  • With a sharp knife, cut into pasta-size strips and then hang the pasta on a pasta rack or a chair so the pieces won't stick together. Dust the pasta noodles liberally with flour to prevent sticking- don’t skimp here. 
  • Unfold the pieces and hang them on a rack or over a chair with a towel dusted with flour. Do this right away to prevent sticking.
  • Repeat these steps with the other 3 pieces of pasta dough.
  • When ready to cook add pasta to 2 gallons of rapidly boiling water with 1 tablespoon of salt added to it. It should only take 2-5 minutes to cook, depending on how thick you cut the pasta. Taste a piece and cook to your liking.

Lasagna Noodles

  • If you want to make lasagna noodles. Roll the first piece into a 12×8 section. Then, cut it into three bigger sections without folding. Approximately 2.5 inches each. Repeat for the other three pieces of dough.

Notes

How to Store Fresh Pasta: If you’re not cooking the pasta right away, cover your well-floured spinach pasta and place it on a tray covered with plastic wrap. Leave at room temperature if cooking within 1-2 hours. Alternatively, refrigerate until ready to cook, up to 12 hrs. It’s best to cook homemade pasta on the same day it’s made, otherwise it might oxidize, discolor and stick together if chilled past 24 hrs.
