Kefir Soda is a sparkling, probiotic-rich beverage you can make at home using Cutting Edge Cultures’ Kefir Soda Starter (Kefir Soda Starter). Unlike traditional sodas loaded with sugar and artificial ingredients, this effervescent drink is crafted from fruit juice or coconut water, and fermented with a powerful blend of beneficial bacteria and yeasts. 🍇 What About the Sugar in Kefir Soda?

One of the things I love most about kefir soda is how the good bacteria and yeasts consume the natural sugars during fermentation. After just 4 days of fermenting with our Kefir Soda Starter, the sugar content drops by about 82%—and you can really taste the difference! The longer it sits in the fridge, the less sweet it becomes as the microbes keep working, turning your soda into a lightly tart, bubbly probiotic drink.

Here’s the estimated nutrition for 1 cup (240 ml) of kefir soda made from 100% grape juice after fermentation:

  • Calories: 27
  • Carbohydrates: 6.48 g
  • Sugar: 6.12 g
  • Protein: 0.5 g
  • Fat: 0 g
  • Vitamin C: 20% DV
  • Potassium: 250 mg

So you still get the nutrients from the juice—like vitamin C and potassium—but with far less sugar and a lot more probiotic power.


🍾 Does Kefir Soda Contain Alcohol?

Like many fermented foods, kefir soda does contain a small amount of naturally occurring alcohol. Because we dilute the juice with water before fermenting, it changes how the fermentation process works—and helps keep the alcohol content low.

We’ve tested our kefir soda and found that, just like kombucha, it typically contains between 0.5% and 1.2% alcohol. However, this can vary based on several factors, such as the type of juice used, the duration of fermentation, and even the temperature of your home.

Measuring alcohol in bubbly, fermented drinks is tricky. Carbonation can interfere with testing tools like hydrometers by making the meter float higher than it should—resulting in an artificially high reading. In some cases, naturally occurring acids and sediment can also be mistaken for ethanol, leading to misleading test results.

We are continuing to work with our labs to obtain the most accurate readings possible. However, based on current testing and fermentation standards, kefir soda falls within the same range as kombucha.

All you need is:

Ferment 3–5 days at room temperature. Pop the top daily to release the pressure (so it won't explode), then enjoy cold and bubbly!

Bonus: You can reculture with ½ cup of finished soda to start your next bottle. It ferments faster the second time—ready in as little as 12 hours!
