Conversion Rate For All-Purpose Einkorn Versus Whole Wheat Einkorn Flour

When substituting whole-grain einkorn for all-purpose einkorn, make sure to weigh a cup of whole-grain einkorn flour at 96 grams versus 120 grams of all-purpose einkorn flour. For most recipes, when using whole wheat einkorn, you may need to add 1-2 extra tablespoons of liquid (such as water or milk) for every cup of flour used.

The added bran and fiber in whole grain flour differ in density and absorb more liquid than all-purpose flour. It's always a good idea to make small adjustments and experiment to achieve the texture and consistency you prefer.

 My Dough is Too Sticky 

If your dough is hard to handle and very sticky, you can always add a little oil to the bowl.

Once the dough is mixed and in the bowl, I pull it back from the bottom of the bowl using an oiled spatula. Then, I place a small amount of oil in the bottom of the bowl.

Roll all sides of the dough in the oil to help with the stickiness. Then cover the bowl with plastic wrap and let rise.

Weigh Your Ingredients — It's Important

When measuring your flour, use volume (grams) instead of weighing (cups/ounces) your flour as the weight can greatly vary. Using volume and scooping your flour (instead of weighing it) can result in variations up to 24 grams per cup depending on how you scoop it out. This can make your dough either watery or overly dry.

Most recipes call for 120 grams per cup of all-purpose einkorn flour or 96 grams per cup of whole wheat einkorn flour, but always measure it with a scale to be sure.

Why Is My Bread Dense?

Einkorn flour has a different type of gluten than regular wheat flour, which helps with gluten allergies. So, it needs more hydration than regular wheat, which helps to give it a lighter and better rise. When you're mixing your dough, aim for it to be a bit on the sticky side rather than too dry. I also add a little oil to roll the dough in while it is rising to help it from being hard to handle and to help it rise better.

Make sure your starter is active and bubbly when you use it; otherwise, the bread won't rise properly.

My Einkorn Products Didn't Rise As Much As I Expected

Einkorn flour products don't really rise as much as regular flour. The starter and the bread won't always "rise until doubled" as most modern wheat recipes call for.

My Overnight Einkorn Bread recipe does rise quite a bit; but if it rises some without doubling, understand that einkorn does rise a lot in the oven while it is baking - and even more so if you use a dutch oven with a lid.

Make sure your starter is active and bubbly when you use it; otherwise the bread won't rise properly.

I Don't Have A Dutch Oven. Can I Use Regular Bread Pans?

Yes, you can! I experimented with this and found I could use a regular bread pan and then put another similar bread pan on top of the bread wiith room for expansion. It helped steam the bread and rise beautifully!

Is Einkorn Bread Gluten-Free?

No, einkorn bread is not gluten-free. However, einkorn contains a different type of gluten. Einkorn has some unique properties that make it better for those with allergies to wheat. Modern wheat has been crossed with two different goat grasses. Goat grasses contain the D genome, which is the source of most gluten intolerances. Einkorn does not contain this troublesome D genome, only the A genome, and most testing for gluten intolerance is based on the D genome. And while einkorn does contain gluten, it is a different type of gluten and allows for easier digestion and nutrient absorption.

Can I Substitute Einkorn Flour For Regular Flour In Bread Recipes?

Yes, but you'll need to make some adjustments. Einkorn absorbs less water than modern wheat, so you may need to reduce the liquid in small amounts in your recipe. Additionally, einkorn dough tends to be stickier and requires less kneading. Start with recipes specifically designed for einkorn, then start substituting by adding a few less spoonfuls of liquid and adjust from there.

How Long Does Einkorn Bread Last?

Like most homemade breads, einkorn bread typically lasts 2-5 days at room temperature. It’s best stored in an airtight container or bread bag. For longer storage, you can freeze einkorn bread for up to 3 months.

Is Einkorn Bread Healthier Than Modern Wheat Bread?

Einkorn wheat is higher in protein, essential fatty acids, B vitamins, and antioxidants than modern wheat. Its simpler gluten structure may also make it easier to digest for some. Overall, it’s considered a more nutrient-dense choice compared to modern wheat bread.

Does Einkorn Bread Taste Different From Regular Bread?

Yes, einkorn has a slightly nutty and sweet flavor with a rich, deep taste as compared with modern wheat bread. Its unique flavor is often described as more earthy and wholesome. I love the taste!

My Einkorn Sourdough Starter Is Not Bubbly

  1. Take the starter out of the fridge and measure out 2-3 teaspoons (10 grams) of the starter.
  2. Add ¼ cup (59 grams) of warm water. (You can add more water if it seems too dry.)
  3. Add ½ cup (60 grams) of All-Purpose Einkorn Flour OR ½ cup (48 grams) of Whole Wheat Einkorn Flour. Mix well.
  4. Leave it on your counter for 3-4 hours (or longer) until bubbly.
  5. Repeat these steps, making sure to remove some of the starter so you only have 2 teaspoons of starter. Too much starter makes it consume the nutrients too fast.
  6. After feeding the starter at least twice daily for 2-3 days, your starter should become strong and healthy. You should see bubbles everywhere, and it will have a nice aroma. Once this happens, it should be ready to make bread again. Or just put your starter back in the fridge and go back to feeding it once a week.

Can I Use My Starter Made With All-Purpose Flour For Whole Wheat Bread And Vice Versa? 

Yes, the starters are interchangeable. You do not need a whole wheat starter to make a whole wheat bread or an all-purpose starter to make a regular bread. If you are more likely to bake with all-purpose flour, keep an all-purpose starter. If you bake more whole grain products, use the whole wheat flour. Just feed them the appropriate flour for the type of bread you are making.

Yes, you can easily convert your sourdough starter to an einkorn sourdough starter. You might want to have two starters, one for einkorn and one for regular sourdough, and you can always dehydrate them so you'll always have more starter. Many health food stores are now carrying einkorn flour along with pasta and crackers too. Online versions are also available.

What types of einkorn flour can I feed my starter?

You can use Einkorn All-Purpose Flour or Einkorn Whole Wheat Flour to rehydrate and feed your starter. They both work equally well to rise your sourdough bread. The Einkorn Whole Wheat Flour will be more bubbly since it contains more minerals than Einkorn All-Purpose Flour. A whole wheat starter will ferment faster than Einkorn All-Purpose Flour and is more thirsty (give it an extra tablespoon of water if your starter is too thick) but they both work really well to make your bread. My recipes use Einkorn All-Purpose Flour to make the bread since it makes for a lighter, fluffier, and higher-rising loaf.
