Einkorn Biscuits

These wholesome biscuits are made with einkorn flour, date sugar, and kefir (or yogurt) for a light tangy flavor. Cold butter is cut into the dry ingredients until the mix is crumbly, then kefir is added to form a tender dough. After rolling, folding, and cutting into biscuits, they’re baked at 400℉ until golden and delicious. Einkorn flour is an ancient grain that's often praised for its nutrient-dense profile. It's richer in protein, vitamins, and minerals than modern wheat, and many find it easier to digest. Date sugar, derived from whole dates, provides a more natural source of sweetness along with trace minerals and fiber, offering a better alternative to highly refined sugars.
