Einkorn Fast Pizza

Ingredients
- 420 grams All-Purpose Einkorn flour – 3½ cups
- 12 ounces Yogurt Plus – Kefir works too
- 4½ teaspoons baking powder
- 1 teaspoon Celtic Sea Salt
- 1-2 teaspoons olive oil

Instructions
- Combine all ingredients in an electric mixer bowl. Using a dough hook, mix the dough until smooth and shiny. Place a small teaspoon of oil on the dough or at the bottom of the bowl and roll the dough so that all sides are covered. This makes it easier to handle.
- Separate the dough into two parts, rolling one at a time on a floured surface. You can flour the parchment paper and roll it out for easy handling.
- Transfer to a lined pizza pan (we use parchment paper). Repeat with the other half of the dough.
- Top the dough with whatever toppings you like.
- Bake at 425°F for 12-15 minutes or until a little darker than "golden brown".
